Ingredients

  • 200 g Soybean
  • 1 tsp Salt
  • 1/2 tsp Black Pepper Powder
  • 1/4 tsp Cinnamon
  • 1/2 tsp Roasted Cumin Powder
  • 1 tsp Amchoor Powder
  • 1/4 tsp Black Salt
  • 1/2 tsp Fennel Seeds (Saunf)

Instructions

  1. Wash soybean and soak it in water for at least 12 hours. In between, add water, if need be.

  2. Discard this water and rinse Soybean in freshwater. This is important to get rid of antinutrients and indigestible proteins released in the water during soaking.

  3. Keep the rinsed soybean in a strainer for 10 to 15 minutes so that excess water drips off. They will still be wet but without any extra water.

  4. Preheat air fryer at 200 degrees C for 5 minutes.

  5. Add all the spices in the soybean. Soybean will easily get coated with spices as they are wet.

  6. Mix nicely. Pop these directly in the preheated air fryer. Do not overcrowd these by putting more at a time. No need of putting in any container or lining aluminium foil.

  7. Air fry these for 15 minutes, tossing after every 5 minutes.

  8. When the colour changes and they turn crisp, take out and let them cool completely. To check, take out one piece, let it cool and taste or snap between fingers.

  9. Once completely cool, store them in an airtight container.

  10. They remain crisp upto a month easily, though they won't last till then.

For Baking In Otg

  1. Preheat Otg at 200 degrees for 10 minutes.

  2. Spread a layer of rinsed and seasoned soyabean on the Otg tray and toast for 15 to 20 minutes. Use both the rods of Otg.

Variation: Soya Chat/Bhel

  1. Add finely chopped onion, tomatoes, capsicum in the roasted soybean. Toss and serve.

Recipe Notes

  1. Soak soybean till they get double in size.
  2. Mix all the spices in a bowl or powder them in a grinder.
  3. Instead of all these spices, simply use Chat Masala.
  4. Adjust spices as per your liking. You can even add chili flakes, oregano, and garlic powder to it.
  5. You can add 1 tsp oil along with the spices. The oil will give shine to the beans.
  6. In case, you find them soft or less crispy once cooled, then put them in the air fryer for few more minutes.
