Grind citric acid to get it in powdered form. Ensure that there is no moisture.
Mix powdered citric acid, baking soda and salt nicely. Your homemade Eno is ready. Store it in an airtight container.
Use it like your normal Eno.
For 200 g semolina batter, sprinkle 1/2 tsp baking soda and on it squeeze lemon juice.
Immediately you will see bubbles, mix everything and steam.
Take water in a glass.
Add salt and lemon juice. Mix it.
Add Baking Soda.
When you store it in powdered form then do shake this bottle once a week. This way, solidification if any, would be dispersed. If not able to shake, then mix using a spoon/knife. This is the only way you can keep this Eno powder for long period.
