How To Make Eno At Home

Ingredients

In Powder Form With Citric Acid (Makes 50 g Eno)

  • 2 Tbsp (30 g) Baking Soda
  • 4 teaspoon (20 g) Citric Acid
  • 1/2 teaspoon Rock Salt

With Lemon Juice

  • 1/2 teaspoon Baking Soda
  • 1 Tablespoon Lemon Juice
  • 1/8 teaspoon Rock Salt

Instructions

In Powder Form With Citric Acid

  1. Grind citric acid to get it in powdered form. Ensure that there is no moisture.

  2. Mix powdered citric acid, baking soda and salt nicely. Your homemade Eno is ready. Store it in an airtight container.

  3. Use it like your normal Eno.

With Lemon Juice

For Instant Fermentation

  1. For 200 g semolina batter, sprinkle 1/2 tsp baking soda and on it squeeze lemon juice.

  2. Immediately you will see bubbles, mix everything and steam.

For Acidity

  1. Take water in a glass.

  2. Add salt and lemon juice. Mix it.

  3. Add Baking Soda.

Recipe Notes

  1. Regarding powdered method,  I want to make it clear that make this in small quantity only and keep it fully dry in an airtight bottle only. This is because when mixed citric acid and baking soda react with each other, it may get moist and also loses its effectiveness after some time. So, keep citric acid and baking soda separately with you and mix in small quantities only, as given here.
  2. When you store it in powdered form then do shake this bottle once a week. This way, solidification if any, would be dispersed. If not able to shake, then mix using a spoon/knife. This is the only way you can keep this Eno powder for long period.

  3. Powdered form Eno is just like readymade Eno and is to used exactly like that only.
  4. I have rounded off the quantity of baking soda and citric acid just for the ease of making it.
