Watermelon Tutti Frutti Recipe

Made with watermelon rind and natural colors, without refined sugar.

Ingredients

My Cup Measures 240 ml

  • 3 Cups Chopped Watermelon Rind (The White Part Only)
  • 1.5 Cups Water
  • 1/2 Cup Boora Sugar
  • 1 Tbsp Beet Puree
  • 1 Tbsp Spinach Puree
  • 1/2 tsp Turmeric Powder
  • 1 tsp Vanilla Essence

Instructions

  1. Chop the white part of watermelon rind into small pieces.
  2. Boil these in water for 10 minutes. Avoid using more water as we will be making sugar syrup using this water only. Like for 3 cups Tutti Fruiti, I used just one and quarter cup water. This is just for an idea that use as little water as possible.
  3. Once pieces have softened up a little, add Boora sugar and continue cooking for another 10 minutes till the pieces turn translucent.
  4. Turn off the flame and divide these into 2 or 3 bowls depending upon of how many colours you want to make it. You may add vanilla essence at this stage, if willing to. Though, I didnt add.

  5. Put 1 or 2 teaspoons of beet puree in one, spinach puree in the second and 1/2 teaspoon turmeric powder in the third bowl.
  6. Cover it and let it remain like this for 6 hours or overnight so that sweetness and colours are absorbed fully.
  7. Put these in the strainer to get rid of excess water.
  8. Dry these on a kitchen towel under the fan.
  9. Once completely dry, fill these in airtight containers and better to keep in the refrigerator.
  10. Use as required.

Recipe Notes

  1. I have used Boora Sugar and that too in very little quantity. You may use sweetener of your choice and may increase its quantity depending upon your taste.
  2. After straining the beet and spinach you may use the leftover in the strainer while kneading flour or making your pancake batter.
  3. Instead of beet, turmeric etc, you may use food colours.
