Millet Bar

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes
Servings 6 Bars

Ingredients

My cup Measures 240 ml

  • 1/2 Cup (40 g) Oats
  • 1/2 Cup (60 g) Millets (Mixed or Any One)
  • 1/2 Cup Nuts (Mixed or any One)
  • 2 Tbsp Sesame Seeds
  • 100 g Jaggery Powder
  • 2 Tbsp Water
  • 2 Tbsp Peanut Butter
  • Few Drops Oil (To Grease The Tray)

Instructions

  1. Dry roast oats for 3 to 4 minutes till they turn golden brown. Be careful while roasting as they tend to burn very fast. For this, keep stirring on medium flame. Once golden brown, immediately take them out in a bowl.
  2. Similarly, dry roast millets for 3 to 4 minutes on medium flame only. It's difficult to make out by the colour, so either taste a few to check if they have become crunchy or just roast for 4 minutes.
  3. Next, roast nuts and sesame seeds. I used almonds and peanuts only. You can use without roasting also but definitely roasting makes them crunchy and augments the flavour to a great extent. I will recommend you to use peanuts for sure as they give very nice taste to the energy Bar.
  4. Chop the roasted nuts finely.
  5. Grease a tray and keep it aside.
  6. Take jaggery powder in the same wok, add water and let it dissolve fully. Once dissolved, boil it for a minute or so. Throughout the process, keep stirring and do not leave it unattended as  it tends to burn very fast.
  7. Add peanut butter and give one more boil.
  8. Add the roasted mix.
  9. Toss everything for 30 to 40 seconds till everything gets together and leaves sides.
  10. Put this mixture on the greased plate and spread it with the back of the spatula.
  11. Leave it on the kitchen counter for half an hour or till sets completely.
  12. Cut into desired shapes.
  13. Store in an airtight container.
  14. You may wrap it individually in butter paper too.
  15. Serve with love.

Recipe Notes

  1. I used 6 types of millets, namely Barnyard Millet, Browntop Millet, Kodo Millet, Little Millet, Foxtail Millet and Ragi, in equal quantity, about 1 tablespoon each. You may use the same or any one or two or more.
  2.  Adjust the quantity of nuts as per your liking.
  3. Add seeds of your choice.
  4. You can substitute peanut butter with Ghee or coconut oil.
