Ragi Banana Cake

Ragi Cake, with the goodness of bananas and walnuts, that too without any refined sugar is perfect for breakfast or as a snack. Also, Gluten-free, low GI and full of nutrients.

Ingredients

  • My 1 Cup measures 240 ml
  • 1 Cup Ragi Flour
  • 1/2 Teaspoon Baking Powder
  • 1/4 Teaspoon Baking Soda
  • 1/8 Teaspoon Salt
  • 1/4 Cup Oil
  • 1/2 Cup Jaggery Powder
  • 2 Bananas
  • 2 0r 3 Tablespoon Curd
  • 1/4 Cup Walnuts
  • 1/2 Teaspoon Vanilla Essence
  • 2 or 3 Tablespoon Milk (Use only if required)

Instructions

  1. Grease a loaf pan of 6" and keep it aside. 

  2. Dry roast ragi flour for about 2 minutes on medium flame.
  3. Preheat oven for 15 minutes at 180 degrees C.
  4. Sift Ragi flour, baking powder, baking soda and salt 2 to 3 times. Sifting incorporates air in the flour which inturn makes the cake light.

  5. Chop walnuts into small pieces. Keep aside about 1 teaspoon for sprinkling on the top and coat the rest with just 1 teaspoon of dry mix.

  6. In the food processor bowl, throw chopped bananas, oil, curd, jaggery powder and vanilla essence.

  7. Run the processor for a minute or so till bananas are pureed.

  8. Add dry mix into this and run the processor till everything is mixed nicely. The batter should be of dropping consistency at this stage. In case, it is too thick then adjust its consistency by adding little milk.

  9. Add flour coated walnuts and mix with a spatula/spoon. Do not run the processor now otherwise walnuts will get mashed.

  10. Put the batter in the greased loaf pan. Tap 2-3 times to release air bubbles if any.

  11. Sprinkle walnuts, though completely optional.

  12. Bake in the preheated oven for 30 to 35 minutes or till the skewer inserted comes out clean.

  13. Loosen the edges with a butter knife and invert the bread on a wire rack.

  14. When gets cool, slice it and serve with love, coffee optional.

  15. You can bake this in disposable cake pans also if baking for gifting purposes. In that case, just let it remain as it is after removing from the oven. No need of inverting it. When cool then wrap with cling film.

Recipe Notes

  1. You can take more or fewer bananas as per your taste. 
  2. The quantity of jaggery powder may vary (by a tablespoon ) depending upon the sweetness of bananas. Highly over-ripened bananas have their own natural sugar (fructose).
  3. Start by adding 2 tablespoon curd only. Later, if the batter is too thick then add some more otherwise not.
  4. You can add cocoa powder if looking for a chocolate flavor. In that case, remove 2 tablespoons Ragi flour and substitute it with cocoa powder.
