Eggless Waffles in My Family

Waffles are the latest craze in my family. And though waffles are popular as a healthy breakfast option, in our family they are enjoyed as a dessert, with scoops of vanilla ice cream and chocolate sauce drizzled all over. In fact, Waffles are one item that can be equally enjoyed in breakfast or dessert or any other time of the day. If for breakfast, you have it with honey/fruits/coulis. The same waffle can be had with a variety of toppings as per choice and preferences.

I have made it a number of times in the past few months and every time it has been a huge hit. All my guests have loved it, not to mention the liking of family members.

Waffles in the Netherlands

On my visit to the Netherlands, along with beautiful countryside with lovely windmills,  Delft Blue factory, Cheesemaking factory, and Wooden shoes factory, I not only had the famous waffles but also attended a short workshop where the chef made waffles right in front of us.

He used the yeast-based dough for making waffles. He was generous to share the recipe with us and had already written it on a blackboard beside him. There only I came to know that Dutch waffles and American waffles are made differently. Former are yeast-based whereas in the latter they use baking soda and baking powder as leavening agents.

 

My Trial With Waffles

Coming back from the Netherlands, I wanted to make waffles but didn't have the waffle maker. So after few days when I bought my new sandwich maker, I ensured that I buy one that comes with waffle plates.

In my waffle maker, I make American-style waffles. For this when I started looking for recipes I found that the ingredients were almost the same as for a sponge cake except that the waffle batter is more liquidy. So I made my first waffles using my cake recipe only and the liquid was with an approximation. Keeping my fingers crossed, when I served these to my sons, they just freaked out and had it with vanilla ice cream, chocolate sauce drizzled all over.

 

How to Make Crispy Waffles?

They were excellent in taste but the only loop was that they were not very crisp. So, the next time I made these, I put them in the air fryer for 3 to 4 minutes and they got perfectly crispy.

But then to make them crispy, I decided to skip away curd. And when curd was not there so baking soda also was not required, otherwise with what it would react? And thus,  finally, I got my perfect crispy waffle recipe.

I never realized that making waffles is so easy. The waffle batter gets ready in just 2 to 3 minutes and another 5 minutes when inside the waffle maker.

 

Serving Suggestions

  • With Strawberry coulis.
  • Chocolate Sauce. Even if you are having chocolate sauce just drizzle little strawberry coulis and see the magic.
  • With Honey
  • With fresh fruits like mango, berries, banana, etc.
  • With Icecream.

 

Step By Step Recipe

  • Take milk in a pan

  • Add jaggery powder and heat it on low flame, stirring in between, till jaggery dissolves fully.
  • As soon as the jaggery is dissolved turn off the flame.
  • Let it cool completely.

  • Take flour and baking powder in a bowl and whisk nicely.

  • Make a well in the center and add oil and vanilla essence.

  • Then add jaggery mixed milk.

  • Mix everything.

  • Adjust consistency using milk.

  • Keep it covered for 1o to 15 minutes.

  • Start preheating waffle maker.
  • Grease all four waffle plates.

  • Pour the mix, starting from the edges, ensuring that all the grooves are filled.

  • Wait patiently for 5 minutes. Check. If golden brown then take them out otherwise cook for some more time.

Cook till crisp

 

  • Keep these on a wire rack.

  • To make pancakes, heat skillet.
  • When nicely heated, lower the flame, grease the skillet, and pour a ladle full of batter. It will spread on its own. Do not try to spread it like Dosa.

FAQs

Q) Can I make ahead Waffles?

And the best part is that you can make ahead these waffles and keep them in the refrigerator or even in the freezer as the case may be. For my New Year get-together this year, I made waffles in advance and kept them in the refrigerator {as I made just a day before). Then in midnight, heated them in the air fryer making them crisp and served to my dear ones. They were a huge hit.

Q) Can I make Pancakes with the Waffle batter?

Recently when I went to my mom's place, my nephews were craving pancakes and asked me if I could make for them. So, using my waffle recipe I tried pancakes and they too came out good.

Q) Are waffles made with all-purpose flour taste better?

Like my cakes, I make waffles also with whole wheat.  Earlier I tried these with all-purpose flour also. then a mix of two flours but no noticeable difference was found. So why not have whole wheat waffles only?

Q) How does jaggery taste in waffles?

Though till now I have been making these with sugar only but this time a brainwave came as to why not try jaggery? So, just with half a cup of flour, I tried making these using jaggery powder. The result was awesome. Jaggery also imparted beautiful colors to the waffles. No one could make out that those were made using jaggery powder.

Here, I heated the milk and jaggery mixture so that jaggery dissolves fully. Alternatively, you can mix these two in the blender too. Whatever method you use, just ensure that it is dissolved fully and no lumps are left.

How to Make Waffles At Home

My Cup Measures 240 ml

  • 1 cup (130 g) Whole Wheat flour
  • 1 tsp Baking Powder
  • 1/2 Cup Jaggery Powder (Or Powdered Sugar)
  • 1/2 tsp Vanilla Essence
  • 1/4 Cup Oil/Butter
  • 1 +1/4 Cup Milk, at room temperature

For Topping

  • 2 Tablespoons Chocolate Sauce (Homemade)
  • 1 Tablespoon Strawberry Coulis (Homemade)
  • 1 Tablespoon Honey/Maple Syrup
  1. Mix jaggery powder in milk and heat it for few minutes till jaggery dissolves fully. Let it cool. Alternatively, just mix the two in the blender. Whatever method you use, ensure that the two are mixed properly without any lumps. . In the meantime do the other preparations.  (See Note 1)

  2. In a bowl, take flour &  baking powder and whisk well. (See Note 2)

  3. Make a well in the center and add oil, vanilla essence, and jaggery mixed milk.

  4. Mix everything and make a nice batter. Do not over mix it else your waffles will turn out to be heavy and chewy.

  5. Leave the batter for 10 to 15 minutes.

  6. After 5 minutes or so start preheating the waffle maker. A nicely preheated waffle maker gives quick and better results.

  7. Grease the waffle maker with oil using a pastry brush.

  8. Have a look at the batter, if it has become too thick then add little milk to adjust the consistency. The consistency should be flowing.

  9. Put a ladle full of batter in the waffle maker. Ensure to cover all the grooves.

  10. Close the lid and wait till they turn golden brown.

  11. Do not open the waffle maker or try to sneak in before 5 minutes, otherwise, the waffles may pull apart and can even stick to the waffle plate. Even after the light turns green, indicating that the waffles are done, wait for some more time.

  12. You will see steam coming out of the waffle maker but that's okay. When the steam stops then only open the maker. It will take 5 to 7 minutes.

  13. Open to check. If they are golden brown then take them out otherwise continue for some more time.

  14. Grease the waffle plates again and make the next lot. Better to grease it every time.

  15. Serve with toppings of your choice.

  16. If making in advance then keep them on a wire rack and when completely cool then pack these in a ziplock bag and put them in the refrigerator.
  17. At the time of serving, take out from the refrigerator/freezer and heat them in the air fryer or Otg or toaster or simply heated griddle for 2 to 3 minutes and serve.

Ideas for Toppings:-  Honey/Maple Syrup/Golden Syrup

  1. Strawberry Coulis/ Chocolate Sauce/Applesauce
  2. Jam/Marmalade
  3. Caramelized Fruits/Plain Fruits
  4. Vanilla Icecream with Chocolate Sauce or Coloured Sprinkles
  5. The options are limitless. Be as creative as you can and enjoy these Healthy waffles.

Variation: Make Pancakes

  1. Make pancakes. Heat the griddle, drizzle little oil. Wipe with a kitchen towel/tissue paper.

  2. Add little cinnamon in the batter and serve these with applesauce.

  3. To give an Indian touch, add little coarsely grounded fennel seeds (Saunf), raisins, and finely chopped nuts in the batter and get superb pancakes.

  4. Lower the flame and put a ladle full of batter. It will itself spread little and take the shape. Do not spread it like Dosa.

  5. Drizzle a little oil/butter on the sides.

  6. Flip and cook from the other side.

  7. Serve with love.

Chocolate Waffles

  1. Mix cocoa powder in the waffle batter and enjoy chocolate waffles.

  1. If you want to make these with sugar then skip the first step and mix powdered sugar with flour only.
  2. I heated the milk and jaggery mixture so that jaggery dissolves fully. Alternatively, you can mix these two in the blender too. Whatever method you use, just ensure that it is dissolved fully and no lumps are left.
  3. You may make these with all-purpose flour also or a mix of both flours. In that case, add milk accordingly. It will require less milk then.
  4. The quantity of milk may vary as different flours have different absorption capacities.
