Not only that but lot of fun, learning, excitement, creativity, etc etc etc. How I am going to do it, no idea. But one thing is for sure that its going to be a mega roller-coaster ride with non stop blogging.Hoping to keep pace with my co-bloggers.

Arrabiata pasta, or simply Pasta in Red Sauce is liked by all and has undoubtedly become the first and foremost food choice today, especially amongst children. Therefore, it is my first post for Blog Chatters A2Z Challenge 2019 wherein my theme is Kids Favourite recipes.

And, I am pretty sure that after reading this recipe you will be more eager than children to make it as it has all that what every mommy wants her children to eat.

While listing the recipes from A to Z, Arrabiata Pasta from alphabet A appealed me the most. Both my sons are crazy about it. Whether dining out or at home, they prefer to have Pasta or Pizza. I think it is the same scenario everywhere. What do you say? Almost every Sunday, our dinner is Pasta only.

Nowadays, as we have wheat pasta easily available therefore one doesn’t t mind too. Wheat Pasta in homemade Pasta sauce and with lots of veggies. Isn’t that cool? I shared my Pasta/Pizza Sauce recipe long back. Its a healthy sauce with a secret ingredient in it and without any preservatives or colours. Though I shared Wheat Pizza recipe almost then only but somehow couldnt post Pasta recipe. May be I had saved it for this day only.

Taste of Arrabiata Pasta depends largely on its sauce. As everyone knows, boiled pasta is mixed with Pasta sauce and that’s it. Once you have good Pasta sauce with you then 80% chances are that your Pasta will come out good. Only 80 %? Then the rest depends on what? Well, the rest depensds on how well you boil it.

Making good Arrabiata Pasta involves 2 steps:

  • Boiling Pasta
  • Pasta sauce

Let’s discuss these one by one.

How To Boil Pasta

You might say what’s so great in boiling Pasta? Right, nothing great, but at times simple things are taken for granted and thus lacks our attention. While boiling Pasta, take care of following points:

  • Always take a large pan with plenty of water to boil pasta. Much bigger than the quantity of Pasta. It is even written on the packet of pasta to use 1 litre of water for every 100 g pasta. Do you know why we need so much of water? This is because pasta has a lot of starch in it. If it floats freely in the water then all the starch easily gets into water otherwise not only the pasta sticks and most of the starch remains on it but also its taste is affected.
  • Let the water boil first. Once it starts boiling then add salt in it followed by Pasta. Salt is added according to the quantity of water and not as per the pasta. So, for 2 litres water add 2 tsp salt. Salt adds flavour to the pasta and excess will be drained away with the water.
  • As soon as you add pasta to the boiling salted water, stir it so that it doesn’t stick to the pot.
  • Let another boil come and then reduce the flame to medium and let it boil. Stir once or twice in between.
  • Pay attention to the cooking time mentioned on the packet of pasta as different pasta have different cooking time.
  • Boil Al Dente: Very important step. You must have read this word many times especially in reference to pasta. What does that mean? Al Dente Pasta means that it is neither crunchy nor too soft but just rightly cooked. If pasta is undercooked then it sticks to the palette. If it is overcooked then it doesn’t taste good and also it breaks when mixed with sauce. Therefore it should be boiled Al dente which means that it is still resistant to the bite. But how do we know that? There are 2 ways of knowing that. First of all, take a piece, cool it little and bite with your front teeth. If it feels firm and not crunchy then it is Al Dente. The second method is that you break a piece then on the rim, you can see a core of uncooked pasta. But I prefer to cook a little more than al dente, maybe 2 minutes more. You do as per your preference and best way is to bite it and check.
  • Once drained fully, use it immediately. But, if, for whatever reason, it is not possible to toss in the sauce then keep it covered till the time to use.
  • Never add oil to the boiling water while cooking pasta. This is because the layer of oil on the pasta doesn’t let sauce stick to it.

Pasta Sauce

For making Pasta sauce, boil tomatoes and onions along with little beetroot. Beet gives the wonderful red colour to the sauce. But do not add much otherwise you will have pink sauce. Once cool, puree it and then cook it till the desired consistency is reached.

Tip: You may laugh reading this or make faces but it is worth trying. Mostly children do not want to eat veggies like bottle bourd, carrot etc. Be a smart mother and add these veggies while boiling tomatoes and onions. Kids will never come to know and will enjoy their pasta.

Detailed Recipe Of Arrabiata Pasta With Step By Step Pics

Boil Pasta

  • Boil water in a large and wide pan with lots of water, for 250 g Pasta take at least 2-litre water.
  • When the water starts boiling add salt.
  • Now add pasta and stir it so that it does not stick to the pot.
  • Follow the time on the packet and cook it al dente or a little more than that. Best is to bite a piece, if it feels good to you then stop cooking.
  • Drain the pasta.

Make Pasta sauce

  • Wash tomatoes and chop roughly. Peel onions, bottle gourd, pumpkin, carrot and beetroot and roughly chop.
  • Add 1 cup water and boil it in pressure cooker for 1 whistle.
  • When it cools down, puree it in the blender and pass through a strainer.
  • In a wok, put oil and add crushed garlic and dried herbs. Saute for a while, add the strained puree.
  • Add salt and sugar. If you have fresh herbs like parsley or basil, add at this stage.
  • Cook till the desired consistency is reached.
  • Lastly, add vinegar, stir and the sauce is ready. You can keep it in the refrigerator for up to 8 to 10 days.

Assembly

  • Wash and chop veggies.
  • In a wok, heat oil and saute veggies.
  • Mix in the pasta sauce. Add half the sauce first.
  • Add boiled pasta. Toss everything on medium high flame. Check the seasoning.
  • If need be, add more sauce.
Arrabiata Pasta
  • While serving, grate some cheese. Parmesan cheese is preferred but you can use processed cheese too, like I do.
Arrabiata Pasta
  • Serve with love, garlic bread optional.
  • If you plan to make it ahead then make the sauce, maybe the previous day. Boil Pasta as late as you can afford, maybe an hour or two prior. And keep them separate. At the time of serving, heat the sauce, mix boiled pasta and toss.

Ingredients

My Cup measures 250 ml

    For Boiling Pasta

    • 250 g Pasta
    • 2 litre Water
    • 2 tsp Salt

    For Sauce

    • 4 Pc (250 g approx) Tomatoes
    • 1 Pc (100 g approx) Onion
    • 1/4 (50 g approx) Beetroot
    • 1/4 (50 g approx) Bottlegourd Optional
    • 1 Pc (50 g approx) Carrot Optional
    • 1/4 (50 g approx) Pumpkin Optional
    • 1 Tbsp Olive Oil
    • 1 tsp Crushed Garlic
    • 1 tsp Oregano
    • 1 tsp Parsley
    • 1 tsp Salt
    • 1 tsp Sugar
    • 1 tsp Vinegar
    • 1/2 tsp Chilli Flakes Optional
    • 1 tsp Basil

    Assembly

    • 1 Tbsp Olive Oil
    • 1 Cup Veggies (Bell Peppers, Broccoli, corns etc)
    • 100 g Cheese (Optional)

    Instructions

    Recipe Notes

    Notes

    1. Use of pumpkin, bottle gourd and carrot is completely optional. This is just to make it more nourishing for the kids and does not affect the taste. 
    2. If you do not wish to add pumpkin etc then use only tomatoes, onion and beet but take 2 or 3 tomatoes more.
    3. After straining the puree, do not throw the pulp that is left in the sieve. It can be added to flour while kneading or in the pancake/Utthapam batter.
    4. Do not boil garlic while boiling tomatoes and onions. This is because garlic releases its flavour best when sauteed.
    5. While boiling pasta, add only salt. Do not add oil to the water. Oil creates a film which inhibits sauce sticking to it.
    6. Basil and parsley lend very authentic taste to pasta. So, do not skip. If not possible to use fresh then use the dried ones.
    7. If you plan to make it ahead then make the sauce, maybe the previous day, and do not add vinegar. Boil Pasta as late as you can afford, maybe an hour or two prior. Keep them separate. At the time of serving, heat the sauce and mix in the boiled pasta. Lastly, add vinegar and serve.
    8. If after preparing the pasta, it gets dried then sprinkle little water on it.
    9. You can add grated cheese or little mayonnaise in it and toss everything in the wok only.
